ingredients
1 tbsp olive oil
1 small onion (chopped)
2 cloves garlic (minced)
1 large jalapeno
1 4oz can green chiles (diced)
1 tsp cumin
2 cups shredded chicken
2 cups chicken broth
2 15oz can white beans
1 can sweet yellow corn
1/4 cup cilantro (chopped)
1 cup monterrey jack cheese
sour cream (for serving)
directions
add olive oil & onion to a large pot. cook on med-high heat until slightly soft.
add garlic, half jalapeno (chopped), green chiles, and cumin
cook, stirring for approx 2 minutes
stir in chicken broth, chicken, and beans. (including liquid from one can)
bring to boil, reduce to med-low and simmer until thickened
using a potato masher, mash until half the beans are broken up
stir in corn, cilantro, and 1/2 cup cheese
top with remaining cheese & sliced jalapenos before serving.
omit jalapenos to tone down heat.
